So you want to prep lunches for the week Sunday night, but by Thursday they are as safe eating out of a garbage can.
I find the best way to meal prep lunches for the week is to have hot meals prepped for Monday and Tuesday, an amazing salad on Wednesday, and something yummy on Thursday and Friday you can prepare in advance that will not spoil.
My favorite late week prep food is the party platter for one.
Great to nibble on throughout the day, this pack blends, crunchy, smooth, savory and a bit of spice.

For this filling lunch tray, we will add a variety of cheeses, Swiss, Cheddar, Gouda, Mozzarella or your favorites, and pepperoni.
Then we pick a veggie and low carb dressing for a side. Celery, peppers, raw squash, cucumbers or broccoli all work great.
In the next section we add nuts, my favorite is a mix of pistachios and almonds.
A tangy treat is a handful of cheese crips. These are usually zero carbs and full of zesty cheese flavor.
This is a great lunch to nibble on throughout the day and keep from feeling hungry.
The only thing that would make this better is maybe a Pinot or Merlot…
